35 years of Success

Paul Bailey's journey with Brend Collection spans an impressive 35 years on and off. Starting as a part-time waiter at the age of 16, Paul's commitment to the company has seen him take on various roles across different hotels within the collection from a Waiter, Day Porter, Bartender, and Junior Assistant Manager to his current role as a Storeman at The Park Hotel. Even as Paul's life led him down different paths, whether pursuing new opportunities or travelling, he consistently felt a magnetic pull back to where it all began for him.

Family ties run deep within Brend Collection for Paul, as both of his sons have found inspiration in his footsteps. Liam has followed Paul's lead winning apprentice of the year in 2019 and currently working as the Restaurant Manager at Saunton Sands Hotel, marking a proud achievement for the Bailey family. Paul's youngest son is currently studying at university but was previously employed at The Imperial Hotel. 

Throughout his tenure, Paul has experienced defining moments, such as serving tea to then Prime Minister John Major and achieving the distinction of being the first chef in the company to pass the Chef de Partie Level 3 in 2019.
